Cupcake is my favorite, it can be used as a very perfect tiffin for kids. Cupcake attracts such beautiful people.

Ingredients:

-1 and 2/3 cups cake flour 
-2 teaspoons baking powder
-1 teaspoons baking soda
-1/3 teaspoon salt
-1/2 cup unsalted butter 
-1 cup granulated sugar
-2 large eggs at room temperature
-1/3 cup sour cream at room temperature
-2 and 1/2 teaspoons pure vanilla extract
-3/4 cup whole milk at room temperature




Process:

First you can preheat the oven to 350°F (177°C). You fulfilled line a 12-cup muffin pan with cupcake liners. You can also line a second pan with 2 liners.  
Second you need to whisk the cake flour, baking powder, and salt together.

Third you using a handheld or stand mixer fitted with a paddle attachment, beat the butter and sugar together on high speed until smooth and creamy, its need about 2 minutes. You scrape down the sides and up the bottom of the bowl with a rubber spatula as you needed.

Then you need to add the eggs and vanilla extract to beat on medium-high speed until combined well with beat in the sour cream. You need to scrape down the sides and up the bottom of the bowl as you needed with the mixer on low speed and add the dry ingredients until just incorporated. You need to mix with the mixer still running on low, slowly pour in the milk until combined.

You remember that do not over-mix. This batter will be slightly thick.


After that pour/spoon the batter into the liners. You need to fill only 2/3 full to avoid spilling over the sides. This bake for 19-22 minutes, or until a toothpick inserted in the center comes out clean. Around 40 mini cupcakes, bake for about 11-13 minutes in same oven temperature. 

Then you need to allow the cupcakes to cool completely.
All cooled cupcakes with chocolate buttercream. 
All cupcakes keep well covered tightly in the refrigerator for 3 days.

Notes:

Cupcakes store for up to 2-3 months thaw overnight in the refrigerator.

Cake Flour:

You can make this cake flour If you can’t get your hands on cake flour. You must mixing it all up in 1 bowl then removing 1/4 cup since you need 1 and 3/4 cups in this recipe.

Whole Milk & Sour Cream:

You know that whole milk and sour cream are strongly recommended for the best taste and texture. 

Why is everything at room temperature? 

All refrigerated items should be at room temperature because of we need to soft mixing that's why all item should be normal.


Chocolate Buttercream

You add a little extra cocoa powder at room temperature . Then the result, the color and flavor were a little deeper! Avoid over-whipping the chocolate buttercream as that will lighten the texture and color.



I suggest you that you must try it once and you get final result. I try this recipe many times and my family is totally fan this cake. Our little family members are so much fan.
