How to make macarons step by step[2020]

Ingredients


  • Sugar (near to 2 cups)
  • 100g almond flour (near to 1 cup)
  • 120g room temperature egg whites (around 3 large egg whites)
  • 1/8 teaspoon salt
  • 40g sifted granulated sugar or caster sugar (3 Tablespoons)
  • Flavoring or color
  • Your desired filling

Instructions:

    1. First blend the sugar and almond flour with blender or in a food processor for 1 minute until well mix or test sweeter .
    2. Beat the eggs and salt together on medium speed for 1 minute. Beat and beat until stiff peaks form about 3 minutes, don't overbeat. At a time using a metal spoon or rubber spatula with the 1 Tablespoon granulated sugar. 
    3. Beat in any flavor or color 2 on low speed, don't overmix. Mix well until combined using metal spoon or rubber spatula. Handle it very lightly while you doing this. 
    4. When it completely combined then its looks like very smooth, sticky, and glossy.
    5. At room temperature the batter sit uncovered  for 10-30 minutes. 
    6. Fit the pipe bag with the piping tip  in line 2-3 baking sheets with silicone baking mats.
    7. Then you need to fill the piping bag with the batter and pipe, round sized onto the baking sheets. Then i sure that holding the bag vertically and close to the baking sheet. 
    8. When you see that the piping, the batter will slightly spread out, so keep that in mind. Make around 2-inch circles. Tap the bottom of the baking sheets on your counter then the rid any large air bubbles. 
    9. At the point lightly sprinkle a few sprinkles if you can, on the wet round shells a dash of cinnamon, or any edible decorations onto the wet round shells. At least 45 minutes and up to 1 hour to sit the pipe rounds. 
    10. To making macarons i follow the system. Form of a dry shell the air helps to rounds for set. When i sent the oven they cannot sticky. Oven heat to 320°F and at a time bake the macaron sheets for 10-15 minutes, rotate the pan about 5 minutes .
    11. The tops should be crisp and the macarons. The macarons will be formed their signature crinkly “feet.”  after that before filling allow to cool completely on the baking sheet .
    12. Form an iconic French macaron cookie then you need to fill and sandwich two shells together.
    13. At the room temperature or in the refrigerator for up to 1 week macarons keep well covered .

    Notes:

    • Important tools : Blender or food processor , piping bag , 1/2 inch tip , Kitchen scale .
    • Egg of whites : First separate the eggs white then let them sit out at room temperature for a few hours; overnight preferred.
    • Color macaron batter : Coloring or flavoring macaron batter ,remember too much addition is not good ,its light batter equals a change in texture and appearance. I use half teaspoon of any flavor extract that is enough for the entire batter or 1-3 drops of food coloring gel. And also you can use food coloring paste.
    • Filling Ideas: I used heavy vanilla frosting. I get the blue when i use 1 drop blue liquid food coloring. Then also use regular vanilla frosting, its just your choice of strawberry frosting, raspberry frosting, jam, salted caramel, marshmallow frosting, lemon curd, milk chocolate frosting, dark chocolate frosting, coconut frosting, butterscotch sauce, apple  etc. Adapted from Les Petits Macarons and Mad About Macarons.
